Hey everyone,

Im a student at Mareeba State High School, currently in year 11, at the
moment in chemistry we have to use a chemical analytical technique to obatin
data useful for envirmonetal and consumer protetion, and i wish to find
Trans Fats in food, but will HPLC help find that?

If there is a University near your home, maybe you should call the
Chemistry library and ask them if they could get you a copy of this
article:

http://www.springerlink.com/content/7371163279867g2w/

It might be a challenge for you to read, but I think you'll find
enough answers to your question in it.

A more recent review of this area can be found in W. M. N. Ratnayake,
Journal of the AOAC International, vol. 87, no.2, 2004, pp.523-539.
This reviews HPLC, TLC and GC methods for cis and trans fats.
Again, you'd probably need to contact a local university and see if
they would be willing to get you a copy.

I should add that it is _not_ an easy analysis to do!
